 1 lb ground turkey
 ½ eggplant, chopped
 1 onion, chopped
 1 green pepper, chopped
 8 oz sliced mushrooms
 14.50 oz diced tomatoes (1 can)
 1 cup tomato sauce
 1 tbsp Italian seasoning
 1 tsp garlic powder
 2 tsp cumin
 3 tbsp chili powder
 2 tsp paprika
 2 tsp pink salt
 ¼ tsp cayenne pepper

Cook turkey in large saucepan over medium-high heat until slightly browned.

Stir in all fresh vegetables and continue to cook until beginning to soften.

Stir in spices, diced tomatoes, and tomato sauce then bring to a boil.

Reduce heat to simmer.

Place lid on saucepan and cook for at least 15 minutes, stirring occasionally.
