Sparkling Lemonade

Enjoy a refreshing sparkling drink this summer. The combination of lemon & carbonation gives this beverage a nice little zing which makes this lemonade feel more like an adult beverage. Of course you could add a shot of rum or vodka if you would like. I’ve used a simple syrup here but liquid stevia can be used instead to make this sugar free. This is the perfect opportunity to break out that carbonated water machine. Continue reading to see flavor variations and make your own signature drink.

 ½ cup cane sugar
 ½ cup water
 4 large lemons
 16 mint leaves
 2 cups carbonated water
 ice
Simple Syrup

1. Place 1/2 cup cane sugar and 1/2 cup water in small saucepan.
Heat on medium heat until sugar is disolved. Allow to cool.

2. Optional - Using a vegetable peeler, peel the yellow part of half to all of one lemon and add to the sugar mixture before heating. Once the sugar is dissolved simmer the syrup for 5 minutes and cool. Once mixture is cooled pull out the peel and chill in fridge until ready to use. This step will intenisfy the lemon flavor.
you can make extra and freeze in ice cube trays for later use

Sparkling Lemonade

1. Squeeze 4-5 fresh lemons into a measuring cup being careful to remove the seeds. depending on the size of the lemons you should have about a cup. While fresh tastes best you can use a bottled juice or a combination of the two.

2. Place 4 or more mint leaves in each glass and muddle or smash with the back of a spoon.

3. Add ice, 1/4 cup each of lemon juice and simple syrup into each glass and then pour 1/2 cup of carbonated water, or tonic water over top. You can add more or less to your taste preference. Garnish with lemon slices and mint if desired.

Variations

1. Add a flavored syrup. Torani has many flavors and comes in sugar free as well. Just remember these are sweetened so simple syrup may not be needed.

2. Add whole fresh or frozen strawberries or raspberries whole, mashed or pureed.

3. Use filtered water instead of carbonated water or try tea.
Consider green tea with lemon & ginger infused simple syrup.

4. Use lime instead of lemon or a combination of lemon & lime.

5. If using alcohol try flavors such as pineapple, citrus, lemon, lime, amoretto, blue curacao or if using lime juice try coconut or ginger.

6. Sliced fresh ginger can be added to the simple syrup as well. Peel a ½ to 1 inch piece of fresh ginger and slice into thin slices. Simmer with the lemon peel for 5 minutes. Cool and strain. Store in fridge until ready to use.
