New Year Bean Soup

There are many traditions for New Years Day one of which is eating black-eyed peas. Eating peas, beans, or lentils on New Years Day symbolizes coins or wealth. We’ve got it all covered in this hearty bean soup recipe that can easily be adapted to make it vegetarian, vegan or gluten-free. Its loaded with fiber & protein to start your new year with health and good fortune!

Serve with cooked greens (because they’re the color of money!) and cornbread (because it looks like gold!) or your favorite crusty bread (just because)!

Yields12 Servings
 8 qts water
 1 ham bone or 1/2 pound smoked deli ham optional
 optional if not using meat add boullion cube & 1t liquid smoke
 14.50 oz can diced tomatoes
 1 lg clove garlic, minced
 1 lg onion, diced
 2 lg carrots, diced
 2 ribs celery, diced
 ½ tsp black pepper
 1 tsp salt omit or reduce if using bouillon
Prepare the Beans

Rinse bean blend and cover with water at least double. Add 1 tablespoon of lemon juice or apple cider vinegar. The beans will soak up water and expand.
Soak 8 hours or overnight. Soaking beans and grains with an acid medium helps to remove the phytic acid. This makes them easier to digest and improves nutrient absorption. Bonus: less gas!

Time to Make Soup

Rinse Bean Mix and add to large pot with 2 quarts of water.

If you don't have time to soak the beans you can use the quick method.
Place rinsed bean mix in pot with 2 cups water and bring to a low boil. Continue at a low boil for 2 minutes then cover and remove from heat for 1 hour.

Add remaining ingredients

If making soup vegetarian/vegan add 1 teaspoon liquid smoke and vegetable bouillon cube.

Cook on low for 4-8 hours stirring occasionally (unless you use your crock pot). Keep at a simmer, do not boil, you don't want to burst your beans! Add water if needed. Soup will thicken as the legumes break down and the beans and grains soften.

Adjust to taste. This soup stores well and improves with age!
You can also recreate your left overs by adding Italian seasoning and cooked pasta.
