 1 cucumber, peeled and cubed
 ½ pt cherry tomatoes, halved
 1 bell pepper (any color), sliced
  cup red onion, sliced thin
 20 large kalamata olives, pitted
 2 oz crumbled feta cheese
 Juice from 2 lemons
 1 garlic clove, minced
 ½ tsp parsley
 2 tbsp olive oil
 Pepper and pink salt, to taste

Pulse garlic, parsley, lemon juice, olive oil, pink salt, and pepper in blender cup.


Combine all veggies in bowl.


Toss veggies with dressing.


Stir in feta.
